CHICKEN!!


Okay those of you who know me, or have eaten with me, know that I am not a big chicken eater...I like red meat, not gonna lie!! But I can not have it all the time, so I have to get creative with the chicken....OR find someone who did. Here is another recipe I found that I made this week. And it was so good I ate it three days in a row! Mix it with your fav veggie mix and you are good to go!

Sun Dried Tomato Chicken Bake

2 lbs boneless skinless chicken breasts cut in half

8.5oz jar of julliane cut sun dried tomatoes

8 garlic cloves, sliced thin

2 tablespoons dried basil

Sea salt and black pepper to taste

Preheat oven to 375. Place the chicken breasts in a large glass baking dish. Sprinkle with the dry spices and mix well. Sprinkle the sliced garlic on top and spread the sun dried tomatoes and the olive oil that it’s in the jar over the entire dish. Seal tightly with tin foil and bake for 20 minutes. Remove the tin foil and bake for another 15 minutes or until the chicken is no longer pink in the middle.

I made Spinach with mushrooms, grape tomatoes and garlic stir fried in olive oil with salt, pepper and garlic powder! Cook till tender and serve!!

Yummy Goodness!



Okay I am baaacckkk!!! And I have been getting a lot of request for ideas to cook Paleo!! Love!! So I am going to start posting some recipes with pictures!
I made this last night..for breakfast this morning! And I even shared a little with Vic and he said he would pay for them! LOL..they were that good. I got them off Everyday Paleo...if you have not checked out her site DO IT!

So here is the recipe!

Egg Cradles.

Ingredients:
3 large sweet potaoes, peeled and grated
1/4 grass fed organic butter, or coconut oil
sea salt to taste
12 eggs
2 oz of prosciutto or bacon ( I used bacon)
diced chives or green onions

Directions:
Preheat oven to 350.
Mix grated sweet potatoes with butter and salt
Grease muffin pan with butter or coconut oil
Press the grated sweet potatoes into each muffin cup making sure the bottom and sides are covered with the s. potato
Cook for 25-30 minutes
Pull out crack an egg in each muffin cup and top with bacon and onion
Bake for another 10 minutes or till desired yolk
Pop out with a knife or spatula
